Oolong Tea

Of all the different forms of tea produced, oolong teas are among the most sought after and highly priced. Prized by people of the far-east, these teas are produced in a wide variety. Oolong teas are only produced using the top leaf of the tea plant using a process which requires years of training and experience. With oolong tea production, oxidation levels reach approximately halfway between black and green tea. The green leaves are allowed to turn partially brown before drying, so that oolongs share some of the taste characteristics of both green and black teas. The various grades of oolong tea depend on the variety of the tea plant used and also on the season in which the tea leaf is harvested. The skill of the person handling the tea during production is of utmost importance as well, since the timing of each individual step is a crucial determinant of the quality of the resulting tea. The knowledge of production is usually handed down within families from one generation to the next. In the northern mountains of Thailand, Chinese families which migrated here several generations back have been carrying out the traditions of oolong tea production. The partial oxidation of the tea leaf results in the tea having a color darker than green tea but lighter than black tea. The taste is also stronger than green tea but less bitter than black tea. Depending on the variety of the leaf, oolong tea can have a very sweet and pleasant after taste without the need for flavoring.
